Chow Down on These Enticing Apple Pie Pancakes

Fall in love this season with these delicious and comforting homemade Apple Pie Pancakes!

The inspiration to make these apple pie pancakes one Saturday morning came to me when I discovered that my husband ate the last banana. I faithfully add mashed banana to our Saturday morning pancakes. Obviously, I couldn’t do it that day.
When I checked our refrigerator, the only fruit in sight was a bag of honeycrisp apples. I thought about making cinnamon apples instead of pancakes and… boom! My idea was born.
Want to know a secret? I had never made a homemade apple pie before making these pancakes. When I was developing this recipe, I was basing it off the memory of my taste buds.
Though I may not have experience making apple pies, I am an expert pancake maker. Read below to get some tips on how to make the best pancakes every single time.
The Science Behind a Good Pancake
Don’t overmix the batter
Mix the batter just enough until your dry ingredients are wet and the batter is a little lumpy. Lumps are good! They help carbon dioxide to remain in the batter. Heat helps carbon dioxide rise. This results in a more light and airy pancake.
Test your heat
Did you know your first pancake doesn’t have to be the ugliest? A too hot or too cold cooking surface when making the first pancake is a very common mistake.
Test your heat by flicking a few drops of cold water onto the skillet or griddle. If it’s too hot, the droplets will quickly evaporate. If it’s too cold, the droplets will stay on the surface and boil. You’ll know it’s just right when the droplets pop up and “dance” across the surface.
Don’t press down
When I first started making pancakes, I would press down on them to make them cook faster. Don’t be like me! Pressing down on pancakes with a spatula will result in flat and heavy pancakes.
